Miso Soup
1 cup water
about 4 heaping tablespoons miso paste (more or less to taste - I personally prefer white miso over red, but either is fine.)
1 teaspoon katsuo-dashi (Ask for this and get your miso at a Japanese groceria.)
4-10 ounces firm tofu (to preference)
2 scallions, chopped
Drain and cube about half a package of tofu (more or less to taste). Bring water in saucepan to a boil. When boiling begins, add tofu cubes. After about 2 minutes remove from heat. Add miso paste and stir. Add katsuo-dashi and stir. Add chopped scallions, stir, and serve.
Serves 3-4.
