Soba



About 14 oz. soba (buckwheat noodles, dry packaged)

Memmi, diluted 1:1 with cold water

½ sheet nori, slivered

1 scallion, chopped

Wasabi (green spicy radish paste). [Can be bought powdered in little tins and mixed with water to form a paste. Sometimes available pre-mixed in squeeze tubes. Use or cover wasabi after mixing with water, as it loses its potency in minutes. Only mix what you'll immediately use.]



Boil soba in a very large pan like pasta 4-5 minutes. Drain. Rinse with cold water until cool. (Note: Soba may also be served warm.)

Serve diluted Memmi in bowls for dipping. Serve chopped scallion, nori, and wasabi on the side in small dishes. These may be added to the dipping sauce at the diner's preference. Serves 4.
